…oregano, thyme and bay leaves. Stir in 1 tsp. salt and 1/2 tsp. pepper, and bring to a boil. Cover, reduce heat to low and simmer, stirring occasion- ally, for 2 hours. Remove lid, and cook another hour, until meat is very tender and the liquid is thick. Adjust salt and pepper to taste. (May be made up to a day ahead at this point.
