oregano, thyme and bay leaves. Stir
in 1 tsp. salt and 1/2 tsp. pepper, and
bring to a boil. Cover, reduce heat to
low and simmer, stirring occasion-
ally, for 2 hours. Remove lid, and
cook another hour, until meat is very
tender and the liquid is thick. Adjust
salt and pepper to taste.
(May be made up to a day ahead
at this point. Cool, cover and chill if
making ahead of time.)
Keep warm until ready to serve.
When ready to serve, prepare the
pasta according to package direc-
tions to al dente (do not overcook).
Drain well (do not rinse), and trans-
fer to a large serving bowl.
Ladle the lamb mixture over the
pasta. Serve immediately.
Makes 6 servings.

CHOCOLATE MOCHA
CAKE
Cake:
2 cups flour
2 cups sugar
1 cup unsweetened cocoa
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 /2 cup vegetable oil
2 large eggs
3 /4 cup strong coffee
1 cup milk (or soy milk)

Coffee glaze:
1 /4 cup butter or margarine at
room temperature
2 cups powdered or confec-
tioners' sugar
'A cup strong coffee

Preheat oven to 350 degrees. Spray
a 10-inch bundt or tube pan well
with nonstick cooking spray.
Sift together the flour, sugar, cocoa,
baking soda, baking powder and salt
in a bowl. Set aside.
Beat together the oil and eggs in a
large bowl. Add the coffee, milk and
vinegar. Add in the dry ingredients,
and mix until smooth; batter will be
thin. Pour into prepared pan.
Bake in the preheated oven for
40-50 minutes, or until a toothpick
inserted into the center of the cake
comes out clean. Cool for 30 minutes
or more before unmolding onto a
serving plate.
Prepare the glaze:
Combine butter (or margarine)
and sugar in the bowl of a food
processor. With the motor running,
drizzle in the coffee until smooth
and creamy.
To serve, slice the cake and drizzle
the glaze over each slice.
Makes 12 or more servings.
