n Shavuot there is great cel-
ebration — not only because
the eight-day
festival is a time of harvest,
but also because it is said
that on the day God gave
Moses the Torah, Mount
Sinai miraculously bloomed
in exultation. Around
the world, therefore, Jews
participate in a tradition
of decorating our homes,
classrooms and synagogues
with sheaves of wheat, leafy
branches and fresh flowers.
It's also customary to eat
dairy foods on Shavuot. One
school of thought explains
that before the giving of the Torah,
there were no laws of kashrut. With

the Torah, laws regarding the prepara-
tion and eating of certain foods were
handed down. These laws
contained specific informa-
tion about the preparing
and eating of meat.
Since the Israelites were
not prepared to eat meat
under the restrictions of
the new laws, no meat
was served on Shavuot.
Today this custom is still
practiced, with the serving
of dairy foods, usually at
lunch.
So on the menu this week
is ... dairy ... in every rec-
ipe: another wonderful way
to "milk" this holiday, which begins
Saturday night, May 26.

RED SNAPPER TIKKA
6 portions boneless red snapper fil-
lets (skin on)
kosher salt and pepper to taste
ground cayenne pepper, optional
lime wedges, garnish
Sauce:
1 cup plain yogurt
1 Tbsp. fresh lime juice
1 tsp. ground cumin
1 tsp. ground coriander
1 /2 tsp. ground turmeric
1 /2 tsp. cayenne pepper
1 /2 tsp. ground black pepper
1 Tbsp. minced fresh ginger
Preheat grill to high. Line a rimmed
baking sheet with foil, and spray with
nonstick baking spray (or preheat
oven to 425 degrees, and spray the
rimmed baking sheet with nonstick
cooking spray). Arrange the seasoned
fillets on the prepared baking sheet,
and set aside.
Combine the sauce ingredients in a
bowl, and stir well. Spread the mixture
over the fillets.
Cook for 10-12 minutes. Serve hot
with lime wedges on the side.
Makes 6 servings.

SOUR CREAM
BLUE CHEESE SLAW
Salad:
6 cups shredded cabbage
1 cup chopped scallions
1 cup chopped celery
1 cup shredded carrots
1 cup chopped parsley
1 cup crumbled blue cheese
salt and pepper to taste

Dressing:
1 /4 cup fat-free mayonnaise
1 /4 cup cider vinegar
1 Tbsp. sugar
In a large bowl, combine all salad
ingredients, and toss well. In a small
bowl, combine the dressing ingredi-
ents; pour over salad, and toss to coat.
Makes 8 servings.

CREAMY RICE PUDDING
1 cup uncooked medium- or
short-grain white rice
2 cups water
3 cups evaporated skim milk
1 /3 cup sugar
1 /4 tsp. salt
1 large egg
1 tsp. real vanilla extract or vanil-
la paste
2 Tbsp. butter (optional)
ground cinnamon, garnish
Combine rice and water in a sauce-
pan with a tight-fitting lid. With the
lid off, bring the water to a boil over
medium-high heat. Reduce heat to
simmer, cover with the lid and cook
for 20 minutes. Stir in the evaporated
milk, sugar and salt. Bring to a boil
again over medium-high heat.
Remove a ladleful of the hot milk/
rice mixture to a bowl. Whisk in the
egg until incorporated.
Reduce heat to simmer, and stir in
the milk/egg mixture. Cook on low
heat, stirring frequently until the mix-
ture is thick and creamy. Stir in the
vanilla and butter (if using). Do not ,
boil, or the eggs will curdle (scramble).
Serve hot, warm or cold, sprinkled
with cinnamon. 6 or more servings.
