Line a rimmed baking sheet with foil, and spray with nonstick baking spray (or preheat oven to 425 degrees, and spray the rimmed baking sheet with nonstick cooking spray). Arrange the seasoned fillets on the prepared baking sheet, and set aside. Combine the sauce ingredients in a bowl, and stir well. Spread the mixture over the fillets. Cook for 10-12 minutes. SOUR CREAM BLUE CHEESE SLAW Salad: 6 cups shredded cabbage 1 cup chopped scallions 1 cup chopped celery 1 cup shredded carrots 1 cup chopped parsley 1 cup crumbled blue cheese salt and pepper to taste Dressing: 1 /4 cup fat-free mayonnaise 1 /4 cup cider vinegar 1 Tbsp. sugar In a large bowl, combine all salad ingredients, and toss well. In a small bowl, combine the dressing ingredi- ents; pour over salad, and toss to coat. Makes 8 servings. CREAMY RICE PUDDING 1 cup uncooked medium- or short-grain white rice 2 cups water 3 cups evaporated skim milk 1 /3 cup sugar 1 /4 tsp. salt 1 large egg 1 tsp. real vanilla extract or vanil- la paste 2 Tbsp. butter (optional) ground cinnamon, garnish Combine rice and water in a sauce- pan with a tight-fitting lid. With the lid off, bring the water to a boil over medium-high heat. Reduce heat to simmer, cover with the lid and cook for 20 minutes. Stir in the evaporated milk, sugar and salt. Bring to a boil again over medium-high heat. Remove a ladleful of the hot milk/ rice mixture to a bowl. Whisk in the egg until incorporated. Reduce heat to simmer, and stir in the milk/egg mixture. Cook on low heat, stirring frequently until the mix- ture is thick and creamy. Stir in the vanilla and butter (if using). Do not , boil, or the eggs will curdle (scramble).
