his year, Memorial Day falls
on Monday,
May 28. It's
a time not only to
remember those who
have served their coun-
try and fallen in battle,
but also a day to kick
off the summer and,
traditionally, serve up
a casual meal of ham-
burgers and hot dogs
cooked on the grill.
If you're looking
for a way to avoid the
saturated fat — and
help the environment by reducing the
greenhouse gas emissions associated
with livestock production — consider
The Meat-Free Monday Cookbook
(Kyle Books$29.95). Chock-full of
vegetarian — and therefore kosher —
recipes, it offers menus for each of the

52 weeks of the year, with two main
recipes, plus four other ideas (includ-
ing dessert!) for each meal of the day.
Former Beatle Paul McCartney
and his daughters
Stella and Mary (their
mother, the late Linda
Eastman McCartney,
was Jewish and a long-
time proponent of veg-
etarianism) launched
the Meat Free Monday
Campaign in 2009 as a
simple idea to make it
easier for everyone to
cut down the amount
of meat in their diet.
Their recipe contri-
butions are joined by
other celebrity and chef supporters of
the campaign, including Israeli-born
chef Yotan Ottolenghi ("Smoky Polenta
Fries").
Here, a couple of meatless alterna-
tives for this Monday's holiday cel-
ebration.

t LENTIL, CHICKPEA, CHEDDAR AND ONION BURGERS

Guilt-free fast food! Perfect in a
toasted bun, these deliciously spicy
burgers will become firm fam-
ily favorites and are guaranteed to
convert even the most committed of
carnivores.
3 Tbsp. olive oil
1 large onion, chopped
2 cloves garlic, minced
1 tsp. ground cumin
'A tsp. cayenne pepper
14 oz. can lentils, drained and
rinsed
14 oz. can chickpeas, drained
and rinsed
1 Tbsp. tahini paste
2 Tbsp. freshly chopped parsley
1 large organic egg, beaten
2 cups fresh breadcrumbs
1 cup grated Gruyere
1 cup feta, crumbled
salt and freshly ground black
pepper
all-purpose flour, for dusting
I To serve:
Burger buns
shredded lettuce
sliced tomatoes
sliced red onions
sliced avocados
sour cream
ketchup

mayonnaise
pickles and relishes

Heat 1 Tbsp. of olive oil in a fry-
ing pan, add the chopped onion
and cook over medium heat until
tender but not colored. Add the gar-
lic, ground cumin and cayenne, and
cook for another 30 seconds. Remove
from the heat.
Put the lentils and the chickpeas
in the bowl of a food processor, and
pulse until coarsely chopped. Add
the onion mixture, tahini paste and
parsley, and pulse again until corn-
bined and nearly smooth. Spoon into
a large bowl, and add the beaten egg,
breadcrumbs and both of the chees-
es. Mix using your hands, and season
well with salt and freshly ground
black pepper.
Shape the mixture into patties, and
lightly dust in flour. Heat the remain-
ing olive oil in a large frying pan,
slide the burgers into the pan and
cook until golden on both sides.
Serve in toasted buns with lettuce,
tomatoes, red onions and avocados,
and with a spoon of sour cream,
ketchup or mayonnaise, and pickles
of your choice.
Serves 4.
