son, general manager of
Northfield Hilton, Troy.
Gimson was one of 10
hotel executives, eight from
the United States and two
from Canada, to be so hon-
ored by the American Hotel
and Motel Association at its
68th annual convention in
Houston, Texas.
The select group of CHA
designees . . . there are only
100 around the world ... in-
cluding owners, adminis-
trators, consultants and
educators — who are re-
quired to pass stringent and
in-depth examinations
covering all phases of hotel
and motel management and
operations, in addition to
demonstrating leadership,
professionalism and compe-
tence in management pos-
itions.
Gimson has been gen-
eral manager of the
Northfield Hilton since
its opening in February,
1976 ... He joined Hilton
in 1963 after serving
other internationally
known hotel operations
in London, England . . .
and has been a general
manager of several Hil-
tons in the U.S. since
January, 1968.
The recognition awarded
Gimson is only the sixth in
Michigan in the last decade.

his nine-day stay tomorrow
evening at db's Club in
Hyatt Regency, Dearborn.
Lewis has successfully
weathered more than two
decades in show business
... and was a logical per-
sonality to launch db's Club
into the 1980s of show busi-
ness ... He has continually
claimed the indisputable
king of rock and roll title .. .
and patrons of db's are hear-
ing and seeing a man who is
colorful, highly-talented
and downright entertain-
ing.

OPENED his new Diggers
restaurant ... which he de-
scribes as _ a restaurant for
the 80s ... at 5 p.m. yester-
day.
He had operated the res-
taurant on Grand River for
four years as Clamdiggers,
a fine seafood eatery . . . Al-
though it was thriving,
Chuck closed it Jan. 1, did
extensive remodeling, and
created a new personality
and broader menu with
many lower-priced entrees
for the restaurant.
"It is more informal,
brighter, more upbeat and
more versatile," says
Chuck. "A great spot for a
sumptuous, fresh seafood
dinner and good wine if
that's the mood you're in.
But if you're on the way
home from racquetball at 10
p.m. and in the mood for
bar-b-que ribs and beer,
we've got it. We're much
more attuned to impromptu
dining and snacks now,
with our sandwiches and a
la carte items on the menu,
and our first come, first
served seating policy and no
reservations."
New items on the
broader lunch and
dinner menus include
Aspen bar-b-qued ribs
from Chuck Muer's Shaft
restaurant in Aspen,
Colo., prime rib, and a
linguini and red clam
sauce created by Execu-
tive Chef Larry Pagliara.
Old favorite Clamdigger
entrees like Maine lobster,
Alaskan King crab legs,
stuffed flounder and fresh
fish from Boston, the Great
Lakes and Canada still oc-
cupy an honored place on
the menus ... The raw sea-
food bar is still a center at-
traction, with its heaps of
fresh oysters, clams and
shrimp on a bed of crushed
ice.
Prices now run about $2
lower on most dinners by in-
cluding the basic entree,
vegetable and hot
homemade bread, and leav-
ing soups and salads op-
tional, a la carte ... Wait-
ing time should no longer be
a problem on most days ...
Seating capacity has been
expanded from 185 to 225 by
removing the salad bar and
piano bar.
WHY DON'T restau-
rants use brewed decaffei-
nated coffee (Sanka, Brim,
etc.) instead of packets and
hot water? . . Why not
treat orders for them the
same as regular coffee?
LINDY'S, the favorite
haunt in New York of
bookmakers, horseplayers
and well-heeled hustlers,
was started on Aug. 20,
1921, by a 33:year-old Ger-
man immigrant, Leo Lin-
demann, a professional wai-
ter ... His partners were
Joseph Kramer and Manny
Kalisch, haberdashers, and
Sam Horowitz, who had a
lingerie firm . .
In the back of the counter
was Lindy with his carving
knife ... Behind the cash
register sat Clara, Lindy's
wife . . . and in the kitchen
were Lindy's special recipes
that had been handed down
to Clara Lindemann by her
mother and grandmother
. They are still staple dis-
hes at the Lindy's of today
on Avenue of the Americas.
