4 1/2 cups Corn Flak
cereal, crushed to 2 cups
1/2 t poon p prika
1/2 teaspoon onion powder
1 cup skim milk
1 egg. beaten
1 lb. catfish nuggets
(about 36 nuggets)
1 clove garlic, minced
1 tablespoon olive oil
1/2 cup chopped onions
1/2 cup chopped green
peppers
1/4 cup chopped celery
1 tablespoon sugar
1/4 teaspoon red pepper
flakes
1 can (60z) tomato paste
1/2 cup water
Vegetable cooking spray
Stir together cornmeal, flour,
oda and alt. Set aside.
In large mixing bowl, combin
All-Bran cereal and milk. Let stand
2 minute or until cereal i lightly
softened. Add egg whites, oil,
chee e, com and green onions. Add
flour mixture, stirringjust until com­
bined. Spread batter into 8x8x2-
inch baking pan coated with cooking
spray.
Bake at 400· F about 40 minutes
or until golden brown. Serve warm.

1/2 lb. lean ground turkey
3/4 cup chopped onions
1 clove garlic, minced

1 jar (140z) spaghetti sauce

1/2 cup (20z) shredded
part-skim mozzarella cheese

MEATBALL STEW·
4 cups Corn Flakes cereal,
crushed to 2 cups
2 egg whites
1/4 cup no salt added tomato
sauce
1 teaspoon ground cumin
tlb, lean ground turkey
1 cup onions slices
1/2 cup chopped green
pepper
2 cans (14 1/20z) no-salt
added whole tomatoes
1 can (150z) garbanzo
· beans, drained
3 tablespoons .chopped
Cilantro
1 1/2 cups water
1 tablespoon all-purpose flour
Vegetable cooking spray
1/4 cup margarine
1 cup AU-Bran cereal
3/4 cup skim milk
Vegetable cooking spray

for topping.
Stir together the 2 cup flour,
baking powder, soda, alt and spices.
Set aside.
In large mixing bow], beat ugar
and the 1/4 cup margarine until light
and fluffy. Add eggs, buttermilk nd
sweet potatoe . Beat well. Add dry
in redients, mixing only until com­
bined. Stir in remaining Rai in Bran
cereal.
Lightly coat a 9x5-inch loaf pay
with cooking pray and prinkle the
remaining table poons of pecans.
Pour batter into pan; prinkle with
r erved topping, pre lightly.
Bake at 350· F for 1 hour, 10
minute or until toothpick inserted in
center come out clean. Cool 10
minute ; remove from pan. Cool
flour, mixing constantly until
smooth. Stir into meatball mixture.
Continue cooking 5 minutes, or until
mixture thickens. Serve hot.
SWEET POTATO QUICK
BREAD
21/2 cups Raisin Bran
cereal, crushed to 1 1/4 cups
1/4 cup finely chopped
. pecans, dMded
1 tablespoon margarine
1 tablespoon all-purpose flour
2 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Combine peaches, ugar, the 1
tablespoon flour and pice. Set
aside for filling.
In large fry pan coated with
vegetable cooking spray, cook
turkey with onions and garlic over
med. heat. Stir in mushrooms and
spaghetti sauce. Cover; simmer an
additional 20 minutes, stirring oc­
casionally.
In med. bowl, stir together 2 cups
Dour, cornmeal, baking powder and
oregano. With pastry blender, cut
margarine until mixture resembles
coarse crumbs.
In small bowl, combine All-Bran
cereal and milk. Let stand 3 minutes
