WILD RICE WITH ROASTED
BUTTERNUT SQUASH AND
WHITE BEANS
4 cups water

ROASTED SWEET POTATOES
AND APPLES WITH
CRANBERRIES AND SAGE

6 cups 1-inch peeled and cubed
sweet potatoes or yams
6 cups 1-inch cubed Granny Smith
apples
1 1 /2 cup chopped onions
1 cup dried cranberries
1 tsp. minced garlic
1 /2 tsp. ground cinnamon
1 % cup extra-virgin olive oil
1 Tbsp. dried parsley flakes
24 fresh sage leaves, plus more sage
for garnish
kosher salt and freshly ground pep-
per to taste

Preheat oven to 425 degrees. Combine
all ingredients in a large roasting pan,
and toss well to coat the vegetables with
the oil. Roast uncovered for 40 minutes.
Serve hot or warm. Makes 8-12 servings.

ROASTED CELERY ROOT
SALAD WITH PINE NUTS
AND SHALLOTS

2 lbs. celery root (or celeriac), peeled
with vegetable slicer and sliced into
thin matchstick-sized pieces
1 cup thinly sliced shallots
'4 cup extra-virgin olive oil
1 /2 cup pine nuts, lightly toasted
2 cups chopped fresh parsley
salt and pepper to taste
/3 cup red wine vinegar
2 Tbsp. peach preserves
1 tsp. grained Dijon mustard

Preheat oven to 425 degrees. Combine
celery root, shallots and oil in a large
roasting pan, and use your hands to toss
well and coat the vegetables with oil.
Roast uncovered for 15 minutes. Remove
from oven to cool. Add remaining ingre-
dients, and toss well. Makes 6-8 servings.

1 cup uncooked wild rice
1 butternut squash (2 to 2'/2 lbs.
total)
'/4 cup melted butter or margarine
kosher salt and freshly ground
pepper to taste
1 cup cooked cannellini beans
(canned is fine if drained and rinsed)
1/2 cup chopped fresh basil leaves
(or parsley)
2 tsp. grated orange zest

Preheat oven to 425 degrees. Cut
peeled squash into 1-inch chunks. Toss
with melted butter, salt and pepper in a
large bowl. Arrange squash in a single
layer on a rimmed baking sheet. Roast
for 30 minutes, until just tender.
Bring 4 cups of water to a boil in a
large saucepan over high heat. Add
rice, and bring to a boil again. Reduce
heat to simmer and cook, uncovered,
until rice grains begins to split and are
tender but still slightly chewy, about 45
minutes. Drain, and transfer to a large
bowl.
Add the squash and remaining
ingredients, and gently toss well.
Adjust seasonings to taste, and serve
hot, warm or at room temperature.
Makes 8 or more servings.

SIMPLE ROASTED
CAULIFLOWER

1 head (about 2-3 lbs.) cauliflower,
cut into small florets about 2 inches
long
3 Tbsp. olive oil
kosher salt to taste

Preheat oven to 425 degrees.
Toss cauliflower with oil and salt
in a large bowl. Spread on a rimmed
baking sheet, and roast for 30 minutes,
turning once while baking. Serve hot,
warm or at room temperature. Makes
8 servings.
