3 Tbsp. Canola oil
11/2 lbs. boneless and skinless chicken breast, cut into 1-inch chunks
1 h cup chopped onions
2 lbs. beets with greens (greens stemmed and chopped, beets peeled
and cut into 1/2-inch dice)
3 Tbsp. Sherry wine
1 Tbsp. finely grated orange peel
soy sauce to taste
salt and pepper to taste
1 cup chopped scallions, white and green parts
Heat oil in a large nonstick skillet until very hot. Add the chicken and cook in
the hot oil for 1 minute. Turn the chicken over and cook for 1 minute more.
Remove to a dish and set aside.
Add the onions and stir for 30 seconds. Add the beets and greens and cook
for 2 minutes more. Add the chicken, wine and orange peel and cook for 3
minutes more. Add the soy sauce to taste (start with 2 Tbsp.). Season to taste
with salt and pepper. Serve sprinkled with scallions (over fresh cooked, hot,
white or brown rice, if desired). Makes six servings.
