Add the beets and greens and cook for 2 minutes more. Add the chicken, wine and orange peel and cook for 3 minutes more. Add the soy sauce to taste (start with 2 Tbsp.). Season to taste with salt and pepper. Serve sprinkled with scallions (over fresh cooked, hot, white or brown rice, if desired). Makes six servings.
