en breast halves, visible fat removed
juice of 1 lemon
3 Tbsp. extra-virgin olive oil
2 Tsp. granulated garlic (not garlic
powder)
1 tsp. kosher salt
1 tsp. dried oregano
Vinaigrette:
1/4 cup red wine vinegar
1/2 cup olive oil
1 tsp. salt
1/2 tsp. fresh ground black pepper
Salad:
8 cups romaine lettuce, torn into bite-
sized pieces
2 cups chopped parsley
1/2 cup fresh chopped mint leaves (any
variety)
2 cups chopped English or seedless
cucumber
1 pint grape or cherry tomatoes, halved
24 Kalamata olives, drained
1 green, red or yellow bell pepper,
chopped
1 red onion, peeled and sliced paper
thin
fresh ground pepper to taste
Marinate the chicken: Combine the
chicken with all the listed ingredients
in a large zipper style bag. Seal the bag
and turn it several times to coat the
chicken completely. Chill for several
hours (up to overnight), turning once
or twice.
Make the vinaigrette: Combine all
ingredients in a jar with a tight-fitting
lid and shake well. Set aside.
Make the salad: Combine lettuce,
parsley and mint leaves in a large bowl
and toss well. Arrange the greens on a
large serving platter or in a large salad
bowl. Arrange the remaining ingredi-
ents on top or combine with remain-
ing ingredients and toss well. Chill
until ready to serve.
Grill the chicken: Preheat the grill to
medium-high. Remove the chicken
from the marinade to the hot grill and
cook, turning once or twice, until just
cooked through and lightly charred,
about 5 minutes on each side.
Remove the breasts from the grill
and cool slightly (serve warm or allow
to cool if serving at room tempera-
ture). Place the breasts on a cutting
board and cut diagonally into thin
slices. Arrange the chicken over the
salad and drizzle the dressing over.
Makes 6-8 servings. ❑
