Seal the bag and turn it several times to coat the chicken completely. Chill for several hours (up to overnight), turning once or twice. Make the vinaigrette: Combine all ingredients in a jar with a tight-fitting lid and shake well. Set aside. Make the salad: Combine lettuce, parsley and mint leaves in a large bowl and toss well. Arrange the greens on a large serving platter or in a large salad bowl. Arrange the remaining ingredi- ents on top or combine with remain- ing ingredients and toss well. Chill until ready to serve. Grill the chicken: Preheat the grill to medium-high. Remove the chicken from the marinade to the hot grill and cook, turning once or twice, until just cooked through and lightly charred, about 5 minutes on each side. Remove the breasts from the grill and cool slightly (serve warm or allow to cool if serving at room tempera- ture). Place the breasts on a cutting board and cut diagonally into thin slices. Arrange the chicken over the salad and drizzle the dressing over. Makes 6-8 servings. ❑ More recipes can be found at JNOnline.com. 1)111) 248-539-FACE 6635 Daly Rd.
