Summer Pleasures/2002
Fill a 10-ounce glass with 6-8 ice
cubes. Add 2 ounces fresh lime juice, 1
ounce fresh lemon juice and 1/4 cup
ginger syrup. Stir with a long-handled
spoon to blend.
Add a splash of raspberry syrup and
top with 3-4 ounces sparkling water.
Ginger Syrup
Bring 1 cup water to boil. Lower heat
and stir in 1/2 cup sliced, fresh ginger.
Cover and remove the pan from the
heat. Let stand 1 hour.
Strain the mixture into another
saucepan. Bring the ginger water to a
boil over medium-high heat. Remove
the pan from the heat and add 1 cup
sugar. Stir until dissolved.
Cool completely and pour into a glass
jar. Store and use as needed. Keeps up to
two weeks in refrigerator.
