Tay-Sachs Alert
ROASTED PEARS, GORGONZO-
LA AND PINENUT SALAD
For variety, add other salad vegetables
to the greens for a heartier salad.
3 Tbsp. olive oil
4 pears, peeled, halved and seeds
scooped out with a melon bailer
1/2 cup crumbled Gorgonzola
cheese
1/4 cup honey
12 cups fresh salad greens
1/3-1/2 cup balsamic vinegar
1/4 cup toasted pinenuts
kosher salt and freshly ground
pepper to taste
1/2 cup fresh chopped parsley
for garnish
Preheat oven to 400F. Brush olive
oil in the bottom of a large glass or
ceramic baking dish. Arrange pears,
flat side down, in the baking dish
and bake for 30 minutes or until
tender but not mushy. Turn the
pears over and sprinkle the blue
cheese over the halves. Drizzle the
honey over the cheese and bake
another 5 minutes.
While the pears are roasting,
arrange greens on a large platter or on
8 individual salad plates. Remove the
pears from the oven and arrange the
pear halves, cut side up, over the
greens or on the salad plates.
Drizzle the balsamic vinegar over
the pears and greens (you may also
drizzle more oil over the salad if
desired). Sprinkle the pinenuts over
the salad and season to taste with salt
and pepper. Garnish with the chopped
parsley. Makes 8 servings.

Simple and great, use instead of pota-
toes with roast chicken.
3 large pears, ripe but firm, peeled
and cut into eighths
1 large onion or 2 medium onions,
peeled and cut into sixths
1 tsp. dried thyme
kosher salt and pepper to taste
3 Tbsp. olive oil
1 Tbsp. dried parsley flakes
Preheat oven to 350F. Toss all ingre-
dients and transfer to a shallow baking
dish. Roast, uncovered, for 1 hour until
the pears and onions are tender, turning
occasionally during the cooking process.
Adjust seasonings to taste and serve.
Makes 6 servings.
