scoop out the potato without tearing
the skin. Place the potatoes in a large
bowl and add sour cream, butter, gar-
lic, salt and pepper to taste. Add sour
cream and half the cheese. Spoon the
potato mixture back into 8 of the
potato shells. Sprinkle with the
remaining cheese. Place on cookie
sheet and bake at 350 degrees for 20-
30 minutes or until the filling is hot
and bubbly. Sprinkle with chives and
serve. Serves 8.

1 1/2 to 2-pound kosher salami
1/2 cup Dijon or grainy mustard
1/2 - 1 cup apricot preserves
1/2 cup brown sugar

Preheat oven to 400 degrees. Lay the
salami in a shallow baking pan. Cut
deep slits along the length of the sala-
mi. Combine mustard and apricot
preserves in a small dish. Spread the
sauce over the salami. Bake the salami
for 60 minutes, basting often with
the sauce in the pan. Serve hot or
warm, sliced or whole.

3 cups chicken broth or water
1/2 t. salt (or more to taste)
Ground white pepper to taste
Pinch of nutmeg
1/8 t. cayenne pepper
4 cups diced cooked chicken
1 cup frozen peas, defrosted
1/2 cup chopped parsley, loosely
packed
1 package (1 pound) frozen puff
pastry, defrosted

Preheat oven to 350 degrees Spray a
2- to 3-quart casserole or souffle dish
with non-stick cooking spray.
Prepare filling: Melt 2 T. mar-
garine in a large skillet over medi-
um-high heat. Add onions and
saute until translucent. Add carrots
and mushrooms and cook for 3
minutes more. Add 2 T. flour and
stir to coat the vegetables. Cook 2
minutes more. Remove from heat
and set aside.
Place remaining 4 T. margarine
in a saucepan over medium heat.
Stir until melted. Add the remain-
ing 1/4 cup flour and cook, stirring
constantly, for 2 minutes. Slowly
whisk in the broth or water. Cook
until the mixture is bubbly and
thickened. Add the salt, pepper,
nutmeg and cayenne pepper. Add
the chicken, peas, parsley and
sauteed vegetables.
Adjust seasonings and pour the
mixture into the casserole dish.
Place one sheet of the pas-
try over filling. If desired,
use the second sheet to cut
designs or "leaves" of pastry
to decorate the edges of the
casserole. Paste the decora-
tions on the dough with a
little beaten egg. Cut a few slits
into the crust with a knife.
Place the casserole on a cookie
sheet and bake for 25-30 min-
utes until the crust is golden
and the filling is very hot and
bubbly. Serves 6 8, or one hun-
gry dad all day long.
