WITH A VERY
CARING STAFF.

margarine, softened
1 cups firmly packed light brown
sugar
3 eggs
1 cup mini chocolate chips
(optional)
1 cup chopped pecans (optional)

Preheat oven to 350 degrees. Spray
two 9-inch round cakepans with
non-stick cooking spray or one 9 x
12-inch baking pan.
Sift together flour, cocoa powder,
baking powder, baking soda, and salt.
Whisk together sour cream, water,
and vanilla in a medium bowl.
Place butter and sugar in a large
bowl and beat until creamy. Add
eggs one at a time, beating well
after each addition. Add 1 cup flour
mixture to butter mixture. Add 1
cup sour cream mixture. Repeat
until combined. Pour batter into
prepared cake pan(s).
Bake 30 minutes until the tops are
springy and a tester comes out clean.
Cool and remove cakes from round
pan or leave in rectangular pan if
desired. Place on a serving plate
(round cakes) and ice each layer with
the chocolate icing recipe below. You
may leave the cake sides un-iced if
you prefer. Sprinkle top with choco-
late chips and pecans if desired.

Icing:
2 sticks butter, softened
1 cup whipped cream cheese
4 ounces unsweetened chocolate,
melted in the microwave oven
for 2 minutes on high, stirred
and cooled, but still melted
1 T. Kahlua or chocolate liqueur
(optional)
2 1/2 cups confectioners' sugar
