Prepare filling: Melt 2 T. mar- garine in a large skillet over medi- um-high heat. Add onions and saute until translucent. Add carrots and mushrooms and cook for 3 minutes more. Add 2 T. flour and stir to coat the vegetables. Cook 2 minutes more. Remove from heat and set aside. Place remaining 4 T. margarine in a saucepan over medium heat. Stir until melted. Add the remain- ing 1/4 cup flour and cook, stirring constantly, for 2 minutes. Slowly whisk in the broth or water. Cook until the mixture is bubbly and thickened. Add the salt, pepper, nutmeg and cayenne pepper. Add the chicken, peas, parsley and sauteed vegetables. Adjust seasonings and pour the mixture into the casserole dish. Place one sheet of the pas- try over filling. If desired, use the second sheet to cut designs or "leaves" of pastry to decorate the edges of the casserole. Paste the decora- tions on the dough with a little beaten egg. Cut a few slits into the crust with a knife. Place the casserole on a cookie sheet and bake for 25-30 min- utes until the crust is golden and the filling is very hot and bubbly.
