4 cups cooked, drained chickpeas
(canned is fine)
1/4 cup olive oil
4 plum tomatoes, chopped
1/2 cup chopped scallions
Salt and pepper to taste
1/4 cup balsamic vinegar or fresh
lemon juice
Preheat oven to 325 degrees. Toss
chickpeas with olive oil and place them
in an ovenproof pan. Roast, stirring
occasionally for about 30 minutes,
until the chickpeas are lightly browned
(some will cook more than others —
they provide a little crunch to the
dish). Add the tomatoes, scallions, salt
and pepper to taste and serve immedi-
ately or toss with vinegar and chill to
serve as a salad. Serves 6-8.
ENDIVE AND CELERY SALAD
WITH ALMONDS AND RAISINS
Toasted almonds and cumin give
this salad a distinctive Middle Eastern
flavor. It's a subtle dish that can be
served hot or cold.
