Endive and celery salad with raisins and
almonds.

4 large heads of Belgian endive,
leaves separated but not cut
1/2 cup slivered mild-flavored
onions, such as Vidalia
2 celery stalks cut into matchstick
pieces about 2-inches long
1/4 cup olive oil
1/4 cup or more slivered almonds,
toasted in a 350-degree oven for
8-10 minutes
1/2 cup yellow raisins, dried
cherries or dried cranberries
Salt to taste
A sprinkling of ground cumin or
cumin seed to taste

Preheat oven to 350 degrees. Toss
endive, onion and celery with olive oil
and place in a baking pan. Roast,
turning the vegetables occasionally for
20-30 minutes until the endive's edges
are golden and the vegetables are
cooked. Toss with the raisins and
‘ ; almonds and serve, sprinkled with salt
and cumin. Serves 6.

Esau's Pottage is basically a thick
red-lentil soup. It's one of the most
renowned dishes mentioned in
Genesis (see if you can find where).
Use your favorite lentil soup recipe or
try this one laced with spinach and
lemon.

2 Tbsp. olive oil
1 - 1 1/2 cups chopped onion
1/2 cup fine chopped celery
1/2 cup fine chopped carrots
7 cups water
2 cups diced tomatoes (canned are
fine, reserve liquid)
2 cups red lentils, rinsed
1 Tbsp. red pepper sauce
1/2 tsp. ground cumin
1/2 tsp. ground coriander
8 10 ounces fresh baby spinach,
large stems rinsed or 10-ounces
frozen chopped spinach, thawed
Salt and pepper to taste
Fresh lemon or lime juice to taste
