bine. Add vanilla if desired. Pour the
mixture into the caramelized sugar
coated pan. Place the pan, uncovered,
into the pan of water and bake for 1
hour, until the custard is set. Let cool
and chill. Run a knife around the edge
of the custard and turn it over onto a
deep serving dish. Shake the pan light-
ly until the custard falls onto the plate.
The caramelized sugar will automati-
cally become a caramel sauce. Drizzle
the caramel sauce over the custard.
Serves 8.

nguilla, a tiny gem of an
island in the Caribbean,
near St. Martin, with
wonderful cuisine and
beautiful beaches, recently had a
food festival featuring outstanding
chefs from the island's fine resorts
and restaurants.
The chefs prepared some Caribbean
dishes that can easily be duplicated in
the Midwest by making use of season-
al fresh fruits and vegetables.
A
GINGER RUM PASTRY CREAM
1/2 cup sugar
1/3 cup all purpose flour
1/4 teaspoon salt
2 cups cream
4 egg yolks slightly beaten
1 1/2 teaspoons vanilla extract
3 teaspoons grated fresh ginger root
1/3 cup dark rum
In heavy sauce pan stir together sugar,
flour and salt. Stir in cream, cook over
low flame until the mixture is thick-
ened and bubbly. Continue to cook
one minute more.
• Gradually stir one cup of hot mix-
ture into egg yolks. Return all to
saucepan, cook, continue stirring two
minutes more. Stir in vanilla, ginger
and rum.
Cover with plastic wrap and allow
to cool. Serves 4.
