Looking for the Perfect Gift?

Preheat oven to 350 degrees.
Cream butter and sugar, add flour,
sesame seeds, coconut and almonds.
Mix until just incorporated.
Allow dough to chill in refrigerator
one hour.
Roll out on lightly floured surface,
cut into three inch rounds, put on
greased baking sheet and bake 10 to
12 minutes.
In a three-inch mold alternately
layer shortbread, pastry cream and
bananas with two layers. Chill for at
least six hours.
Release mold and serve with cream
Anglaise and caramelized mango and
banana. Serves 4.

YUCCA AND PLANTAIN MASH
8 ounces very ripe plantains peeled
8 ounces yucca peeled and diced
4 ounces potatoes peeled and diced
2 ounces heavy cream
2 ounces unsalted butter
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
Bring water to a boil, add plantain,
yucca and potatoes, cook until tender,
drain. Mash with cream, butter, add
salt, pepper and ground nutmeg.

CALYPSO BEAN AND ROASTED
CORN SALSA
8 ounces dried calypso beans
2 quarts chicken stock
1 bay leaf
1 whole onion peeled
2 teaspoons ground cumin
Cook beans in stock with bay leaf,
whole onion and ground cumin, cook
until soft about one hour.

Salsa
2 ears fresh corn, roasted and
kernels removed
1 red bell pepper, chopped small
dice
1 red onion peeled, small dice
4 ounces whole peeled tomatoes,
crushed and juice
1 teaspoon ground garlic
1 teaspoon or sprig of ground
shallots
6 tablespoons olive oil
1 teaspoon salt
1 teaspoon fresh ground black
pepper
4 tablespoons chopped cilantro
Drain beans and cool. Add diced red
onion, red pepper, grilled corn kernels,
garlic, shallots, olive oil, cumin, whole
peeled tomatoes, juice, salt and pep-
per, chopped cilantro and mix well.
Chill for one hour for flavors to com-
bine. Serves four. Ell
