EGGLESS CHALLAH
2 cakes compressed yeast, or 2
packages active dry yeast
1 teaspoon sugar
2 1/4 cup warm water
8-9 cups flour, sifted
1/2-3/4 cup sugar
1/3 cup oil
1 tablespoon salt (plus 1 teaspoon
extra)
1 tablespoon anise seeds
2 teaspoons vinegar, optional

Glaze

1 egg yolk, beaten with 1 teaspoon C,
water
sesame seeds.
Dissolve yeast and 1 teaspoon of sugar
in 1/2 cup warm water. Let stand for
5 minutes until it foams.
In a mixing bowl, combine 4 cups
of flour, yeast mixture, and remaining
ingredients. Beat for about 3 minutes
until smooth. Beat in remaining flour
one cup at a time, leaving one last
cup.
Knead in last cup by hand or with
a dough hook for 8-10 minutes. Place
