SHOES & SPORTSWEAR

presents

1/2 teaspoon baking powder,
optional
4 eggs
_12 cups flour
-1/2 cup raisins, optional
cinnamon, for sprinkling on baking
sheet

Glaze
1 egg yolk, beaten with 1 teaspoon
water
sesame seeds
In a small mixing bowl, dissolve yeast
and 1 teaspoon of sugar in 1/2 cup of
the water. Let stand for 10 minutes
until foamy.
In a large mixing bowl, pour
remaining 2 cups of water, sugar, oil,
salt, vanilla extract, yeast mixture,
baking powder, eggs, and 4 cups of
flour. Beat well. Add flour two cups at
a time, beating well after each addi-
tion, leaving last cup or two to knead
in with a dough hook or by hand.
'-Add raisins, if desired. Knead for 10
minutes until dough is smooth and
elastic. Dough should be soft.
Place dough in a large greased
bowl, turning over to grease all sides.
Cover with a clean, damp towel. Let
rise in a warm place until double in
bulk, about 1 1/2-2 hours. Punch
down, cover, and let rise again until
double in bulk. (Letting it rise a sec-
ond time is optional.) Punch down
once again. Divide dough into 3
parts. From each part, make 3 or 4
ropes about 10 inches long.
Attach ends of ropes securely and
braid. Place braided loaves on a well-
greased baking sheet sprinkled with
cinnamon. Cover with a damp cloth,
and let it rise in a warm place for
about 1 hour.
/-r Brush with glaze and sprinkle with
sesame seeds. Bake in a preheated 350
oven for 40-45 minutes. When chal-
lah is done, it has a hollow sound
when tapped on bottom. If not,
return to oven for several minutes.
Yields 3 challahs.
