duce to a simmer, cover and
cook until the rice is tender,
about 17 minutes.
3. Meanwhile, preheat the
grill. Alternately thread the veg-
etables onto eight 12-inch skew-
ers. Spray the rack off the grill
with nonstick cooking spray.
Place the skewers on the grill
and cover.
Grill at medium, or 6 inches
from the heat, turning once, for
10 to 12 minutes, or until the
vegetables are crisp-tender.
4. In small bowl, combine the
yogurt, chutney, sour cream, the
remaining 2 tablespoons lemon
juice, and remaining 1/2 tea-
spoon curry powder. Serve the
vegetables with the rice and
chutney cream.
Helpful hint: Use a glass, ce-
ramic, or stainless steel bowl
when marinating foods in an
acid mixture such as the citrus-
based sauce.

Picture a quiet, tree-filled glen.
The snow is melting and a hint
of spring is in the air. Into this
tranquil scene comes a half
frozen, pail-toting flapjack fiend
who starts running from tree to
tree trying to collect it's liquid
gold. Yes folks, it's maple syrup
time.
People always seem to equate
maple syrup with Vermont. They
must have a great press agent
because, Canada, and surprise,
surprise, Michigan are right up
there in amount of syrup pro-
duced. The wide variety of maple
trees provide the sap for maple
syrup but the sugar maple pro-
vides the sweetest sap. There are
different grades of maple syrup
that range in color from pale yel-
low (lightest flavor) to deep am-
ber (deeper, more robust flavor).
Once collected, the almost clear
sap is boiled down to reduce the
water content and create the
syrup.
Don't worry, gathering the sap
doesn't do any harm to the trees.
The tapping of the trees is only
done from late January to early
April and only when the weath-
er conditions of warmer days and
cooler nights makes it possible.
Finding the real stuffis worth
the effort because there is noth-
ing that can compare to the taste
of real maple syrup. It's full-bod-
ied, smoky, caramel flavor adds
a zing to everything from salads
to desserts.
Be warned, however, that not
all maple syrup is kosher. Look
for labeling.
