The wide variety of maple trees provide the sap for maple syrup but the sugar maple pro- vides the sweetest sap. There are different grades of maple syrup that range in color from pale yel- low (lightest flavor) to deep am- ber (deeper, more robust flavor). Once collected, the almost clear sap is boiled down to reduce the water content and create the syrup. Don't worry, gathering the sap doesn't do any harm to the trees. The tapping of the trees is only done from late January to early April and only when the weath- er conditions of warmer days and cooler nights makes it possible. Finding the real stuffis worth the effort because there is noth- ing that can compare to the taste of real maple syrup. It's full-bod- ied, smoky, caramel flavor adds a zing to everything from salads to desserts. Be warned, however, that not all maple syrup is kosher. Look for labeling.
