heritage than through the
food associated with the holidays.
And no better person to do it
than Joan Nathan, whose great
enthusiasm and knowledge have
gained her a national reputation
as the maven of the Jewish
kitchen.
The Children's Jewish
Holiday Kitchen, a new
book by Ms. Nathan
is a departure from
the author's previous
award-winning
books. She says it's
really more of "a per-
sonal book."
Cooking is a very
good way of communi-
cating. It also teaches
math. You have to add
and subtract and all
the while you are cook-
ing you can ask your children
questions. You can really talk to
your children while you are cook-
ing.
The book covers the 10 major
holidays, bringing together dif-
ferent parts of the world and
their celebrations from Eastern
Europe and biblical Israel to con-
temporary America through a
vast array of foods, flavors and
ideas.
Jewish children can learn
about their culture by prepar-
ing the foods that have been
passed down from generation to
generation in Jewish homes.

2 medium-size zucchini
1 large onion
3 eggs, beaten
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup matzah meal
Vegetable oil for frying

the pota-
toes and
the car-
rots. Put
the pota-
toes in cold
water.
Adult with Child: This is a per-
fect way to teach your child how
to use the food processor. De-
pending on the age, keep a good
watch over him or her. Use the
steel blade or the shredding blade
to grate the zucchini, potatoes,
carrots, and onion. Show the child
how to use the "pulse" button or
turn the machine on and off fre-
quently so the vegetables don't
turn into the soupy mess
called a puree. Veg-
etables can also be
grated by hand
with an alu-
minum grater.
Child: In a
bowl, mix togeth-
er the grated veg-
etables, beaten eggs,
salt, and pepper. Stir
in the matzah meal.
Shape the batter into
pancakes, using 1-2 ta-
blespoons of mixture for
each.
Adult with Child: Fry the
latkes, a few at a time, in 1-2 ta-
blespoons hot oil for 1 & 1/2 min-
utes per side. Add additional oil
as necessary.
Drain on paper towels. Serve
hot with applesauce. Makes 24-
36 pancakes, depend-
ing on
size.
Note: If
desired,
fry the
latkes
ahead of
time and
drain on
paper towels for
1-2 hours at
room

pera-
ture.
Reheat on an
ungreased baking sheet in a 350
degree oven for 8-10 minutes.
You can also freeze the latkes and
store them. Reheat in a 350 de-
gree oven for about 15 minutes.
APPLESAUCE
4 pounds very red baking apples
1 lemon
Handful of Red Hots for color,
and to taste
1/2 cup apple juice, cider, or
water
Honey or maple syrup, to taste
Equipment:
Measuring cup
Knife
Heavy pot with lid
Wooden spoon
Food mill
Mixing bowl
Child: Cut the apples and lemon
