1 tablespoon olive oil
1 teaspoon sesame oil
2 shallots, finely chopped
1/4 cup slivered almonds
10-ounce package frozen butter
or lima beans, thawed
1 teaspoon celery seed
2 teaspoons ground cumin
1/2 cup fresh dill, snipped
coarsely with scissors
6 cups finely shredded fresh
spinach
1/3 cup prepared vinaigrette
dressing

Heat oils in large skillet over
medium heat. Add shallots and
almonds and cook until shallots
are golden, 3-4 minutes, stirring
often. Add butter beans or lima
beans, cumin and celery seed and
heat through. Remove from heat.
Add dill, spinach and dressing.
Stir gently. Cover for 1 minute to
wilt spinach slightly. Transfer to
serving bowl. Serve at room tem-
perature. Serves 4.

CURRIED VEGETABLE
SALAD
(Parve)

2 medium onions, peeled and
each cut in 8 wedges
1 large carrot, peeled and cut in
2-inch julienne
1 small size yellow zucchini, cut
in 2-inch julienne
1 red bell pepper, seeded and cut
in 1/2-inch wide strips
8-ounce package frozen sugar
snap peas, thawed
2 cups cabbage, (1/4 small head),
shredded
Dressing:
3 tablespoons balsamic vinegar
1 tablespoon dijon-style mustard
2 teaspoons curry powder
1/4 teaspoon salt
5 tablespoons peanut oil

Place onions in large, shallow,
microwave safe dish. Cook at
High for 1 minute. Add carrot,
zucchini, red bell pepper and cov-
er loosely with paper towels. Mi-
crowave at High for 3 minutes
longer. Transfer to bowl and add
sugar snap peas. Place cabbage
in same dish used for vegetables,
cover loosely with paper towels
and cook at High for 2 minutes.
Add to vegetables in dish. Pour
dressing over and gently toss to
mix. Serve at room temperature.
Serves 4-6.
To make dressing: Whisk to-
gether vinegar, mustard, curry
powder and salt. Slowly whisk in
oil, then stir in mint. Use at room
temperature. Makes 3/4 cup.

WARM PASTA SALAD
WITH FRIED ONIONS

3 tablespoons peanut oil
2 large onions, peeled and sliced
paper thin
1 1/2 cups mushrooms, thinly
sliced
8 ounces pasta shells, cooked al

1/2 cup mild tomato salsa •
