Heat oil in large skillet. Add
onions and fry quickly over medi-
um-high heat until nicely
browned and crisp. Do not over-
cook or onions will be bitter.
Drain on paper towels. Place
mushrooms in small glass dish
and microwave for 1 minute.
Combine cooked pasta, with
mushrooms. Stir in tomato sal-
sa, cilantro, and curry powder to
taste. Season with pepper and
salt. Spoon into serving bowl and
top with fried onions. Serves 4-6

GLORIOUS PAVLOVA
WITH RAIN FOREST

Pavlova:
6 large egg whites
pinch salt
1 cup superfine sugar
1 1/2 teaspoons cornstarch
2 teaspoons white vinegar
1/2 teaspoon vanilla extract
2 tablespoons superfine sugar for
rolling pavlova
11/4 cups heavy cream whipped
to soft peaks*
1/2 cup papaya, diced
Garnish
1-2 kiwi fruit, cut in wedges
* non-dairy whipped topping
may be substituted
Preheat oven to 325 degrees.
Line 11- x 14-inch baking dish
with parchment paper. Spray
with non-stick vegetable spray.
Whisk egg whites until they peak
softly. Whisk in three-quarters
sugar, 2 tablespoons at a time.
Fold in remaining sugar, corn-
starch, vinegar and vanilla.
Spoon into prepared baking dish
and smooth top with spatula.
Bake in center of oven for 15 min-
i utes.I Turn pan around, front, to
back and cook another 10 min-
utes or until just beginning to
brown on top. Cool in pan for 10
minutes. Place a sheet of parch-
ment paper on cooling rack and
sprinkle with extra sugar. Invert
pavlova onto the paper and peel
paper from bottom. Leave to cool
5-10 minutes. With aid of the pa-
per underneath, roll pavlova
lengthwise as for a jelly roll. Cool
completely. When ready to fill,
carefully unroll and spread with
whipped cream or non-dairy top-
ping. Spread papaya over and
with help of paper, roll as for jel-
ly roll. Transfer to serving dish.
Garnish dish with kiwi fruits.
Cover with plastic wrap and re-
frigerate until needed. May be
made the day before. Serves 8. ❑
