Grate potatoes by hand or
in the food processor using
the steel blade with an on-off
pulse motion to yield um -
formly grated potatoes. Drair;',
off excess liquid. There should
be 6 cups well drained pota-
toes. Pour 2-3 tablespoons oil
in a heavy or cast iron skillet,
saute onion until golden,
about 5 minutes. Spoon into
a mixing bowl, adding-pota-
toes, salt and pepper. Add
eggs and mix until well com-
bined. Pour 3-4 tablespoons
of oil into the skillet and heat.
Remove the skillet from the
heat. Turn potato mixture
into the skillet, spreading:
and bake in a hot 400
degree oven uncovered, one
hour or until top is crusty and
golden brown. You can place
it under the broiler, 6 inches
from the heat, to brown more
for a few minutes. Serve hot
cut into pie-shaped wedges.
Top each wedge with a dollop
of yogurt, or sour cream if de-
sired. Makes 8-10 servings.
