one tablespoon at a time, toss-
ing lightly with fork until
dough will form a ball. Press
dough between hands to form
three 5 to 6-inch "pancakes."
(Wrap one in foil for later use.
Refrigerate up to one week or
freeze for longer storage.)

Clean the chicken and cut
into 16 small pieces by di-
viding the wings, thighs,
breasts, and legs into halves.
Prepare a marinade from
the lime juice, soy sauce, and
salt and place the chicken
pieces in the marinade. Cover
and refrigerate for at least 5
hours.

When ready to cook, heat
the oil to 325 degrees in a
heavy cast-iron skillet. Place
the flour, paprika, and salt
and pepper in a brown paper
bag. Add the chicken pieces a
few at a time. Shake them to
coat with the flour and
seasoning mixture and then
fry for about 6 minutes on
each side, or until golden
brown. Do not fry too many
pieces at once as the oil will
cool and the frying will take
longer.
Serve the chicarron hot,
garnished with the lemon
slices. Diners will squirt

lemon juice on the chicken
bits to enhance the flavor.
Serves 4.

PINEAPPLE BREAD
1 /3 cup butter
2 /3 cup light brown sugar
1 egg
2 cups flour
4 teaspoons baking
powder
1 teaspoon salt
2 cups fresh crushed
pineapple

Preheat the oven to 350.
Grease well a 9-inch loaf pan.
In a large bowl, cream the
butter and slowly add the
sugar, beating well. Then, add
the egg. Sift the dry ingre-
dients and add them to the
mixture. Fold in the pineap-
ple and mix well. Place the
dough in the prepared pan
and bake for 1 hour, or until
light golden. The bread is
done when a knife inserted in
the center comes out clean.
Serve warm. One 9-inch
loaf.

Seeks Volunteers

Pet-A-Pet is an animal
visitation program whose
volunteers and their pets pay
regular group visits to nurs- 1
ing homes in the metro area.
Animal visitation programs
have been proven beneficial
in the health care of the
elderly.
Pet-A-Pet visits are schedul-
ed one day per month and last
about one hour.
The program is seeking
volunteers to visit West
Bloomfield Nursing Home.
