Preheat oven to 350 degrees
Grease 1% quart baking dish.
Chop leek finely in food proc-
essor. In a large bowl, mix
together with spinach, salt
and pepper. Set aside. In
separate bowl, whisk together
eggs, egg whites, cornmeal
and water and add to leek
mixture. Stir in cheese and
pour into - prepared baking
dish. Dot with butter or
margarine. Bake in preheated
oven for 20 minutes or until
firm in center and nicely
browned. Serves 4 to 6.
FRESH PLUMS
WITH CREAM SWIRL
1 pound plums, pitted
and halved
juice of 1 lime
2-3 tablespoons brown
sugar
1 /2 cup heavy cream,
whipped
'A cup vanilla yogurt
1 egg white, stiffly beaten
mint sprigs to garnish
(optional)
Place plums in glass serv-
ing bowl. Drizzle with lime
juice and sprinkle brown
sugar over. Stir gently. In
separate bowl, mix together
whipped cream and yogurt.
Fold in stiffly beaten egg
white. Spoon over plum mix-
ture. Garnish with mint
sprigs. Serves 6. Note: 1 cup
vanilla yogurt may be substi-
tuted for mixture of cream
and yogurt.
