PIQUANT VEGETABLES
1-10 oz. package frozen
mixed vegetables
1 tomato, diced
2 cups iceberg lettuce,
shredded
1 /2 cup prepared
vinaigrette dressing
Thaw frozen vegetables in
microwave according to pack-
age directions. Turn into a
medium-sized bowl and add
tomato and lettuce. Gently
stir in dressing. Let sit at
room temperature for 10-15
minutes stirring occasionally.
Serves 6.

WACKY WAFFLES
11/2 cups all purpose flour
2 teaspoons baking
powder
1 /4 cup shredded wheat
cereal, coarsely
crushed
1 /4 cup pecans, chopped
V4 cup golden raisins
1 egg, separated
2 egg whites
1 cup milk
4 tablespoons margarine,
melted
Heat waffle iron. In
medium bowl, mix together
flour, baking powder, cereal,
pecans and raisins. Make a
well in center and stir in egg
yolk, milk and melted marg-
arine. Beat egg whites until
stiff and fold in gently. Pour
about i/3 cup batter over
heated waffle iron, close and
let cook until waffle is crisp
and golden. Waffle is done
when iron stops steaming be-
tween the two halves or ac-
cording to automatic waffle
iron directions. Makes 4.

ORANGE-GINGER
BUTTER
1 stick butter or
margarine, softened
2 tablespoons frozen
orange juice
concentrate
1 tablespoon crystallized
ginger, finely
chopped
In small bowl, beat butter
with orange juice concentrate
until blended and fluffy. Stir
in ginger. Spoon into a pretty
serving dish. Serve with hot
