Poultry Recipes
For Passover

pedal dietary rules for
Passover cooking can
make varied meal
planning difficult, particular-
ly for the cook who doesn't
have years of Passover recipes
to fall back on. With today's
emphasis on lighter,
healthier cooking — even for
the holidays — here are some
simple suggestions for easy to
prepare, low calorie main
dishes that are sure to
become family favorites. The
recipes are from Empire
Kosher.

I FROZEN MEAT DEPT. I

PATTIES

CHICKEN POT ROASTER
1 tbsp. potato starch
% cup orange juice
1/2 tsp. ginger
2 tbsp. orange
marmalade
2 cloves garlic, minced
1% lbs. peeled potatoes,
cut into 1/4 inch slices
1 /2 lb. carrots, peeled and
cut into 1/4 inch slices
1. large roaster, skin
removed
An easy recipe for the
microwave: Combine all in-
gredients in a large glass
dish, cover loosely with wrap.
Cook on high 10 minutes.
Rotate dish. Reduce power to
medium-high, microwave for
30 minutes, rotating dish
halfway through the cooking.
Roaster is done when juices
run clear and leg moves
easily.
Conventional oven: Corn-
bine all ingredients in a
covered roaster, or ovenproof
casserole with lid. Roast on
325 degrees about 1% hours,
or until done. Serves 4.

RED WINE
TURKEY BURGERS
1 onion, chopped
1 lb. ground turkey
1 cup dry red wine,
kosher for passover
2 eggs
cottenseed oil
1 tbsp. tomato paste
Cook onions in frying pan
in oil. Form four patties of
ground turkey mixed with
eggs, season exterior with
salt, pepper and parsley or
oregano. Add the patties as
soon as the onions are golden.
Increase heat slightly and
cook the patties about 4
minutes per side. Remove pat-
ties, add wine to pan. Return
patties, simmer covered for
about 10 minutes. Season to
taste, add one tablespoon of
tomato paste. Serve with
boiled or baked potatoes, and
a mixed green salad. Serves 4.

ORANGE CHICKEN
4 chicken breast cutlets

(Approx. 1 to 11/2 lbs.)
1 cup orange juice
1 /4 cup orange marmalade
salt, pepper, lemon juice
grated rind of 1 orange
1 tbsp. potato starch.
Pound out chicken breast
cutlets to 1/4 inch in thickness,
or cut into strips 1/2 inch wide.
Season with salt, pepper,
fresh lemon juice. Marinate
for at least 2 hours. Mix
orange juice, grated orange
peel and orange marmalade
with 1 tbsp. potato starch in
saucepan, bring to a simmer

and stir until thick. Pour over
chicken, bake at 400 degrees
for about 12 to 15 minutes, or
until cooked, basting from
time to time. Serves 4.

FABULOUS FRYER
1 large fryer
1 large clove garlic
1 /2 tsp. ginger
% cup apricot jam
1 tbsp. potato starch
1 small bay leaf
1 /4 tsp. cinnamon
3 tbsp. rum
2 tbsp. fresh lime juice
Preheat oven to 325 degrees
F. Roast fryer about 1 hour.
Mince garlic, crumble bay
leaf, add the remaining sea-
sonings, and 1 tablespoon
rum, blend well. Remove
chicken, spread seasoning
mixture over breast until well
coated. Return chicken to
oven, roast an additional 15
minutes, baste with pan
juices. Return to oven another
15 minutes, or until chicken
is done (juices will run clear
and leg will move easily).
For gravy, strain pan juices,
add water to equal one cup. In
small saucepan, bring juice to,
a boil. Combine potato starch
and remaining rum, stir into
pan juices, simmer until
gravy thickens and coats a
spoon evenly. Remove from
heat, stir in lime juice. To
serve, carve fryer and top
with gravy. Serves 4. ❑
