ecutive chef at Pike Street
Restaurant in Pontiac, writes
. . . "There is nothing more
difficult for a wine buyer to
buy than red burgundies. In
Burgundy, they may be in the
midst of a streak of very good
vintages. Yet, Americans tend
to shy away from them
because of their history of
sending inferior wines to this
country.
"Louis Latour's son was in
for lunch a short while back
and he confirmed that the
late 1970s and early 1980s
saw wines sent to this coun-
try that should not have been.
There are many quality
restaurants with many well-
known burgundies that are
brown and can't be sold.
"I had lunch with Jacques
Lardiere, winemaker at Louis
Jadot. He also said that dur-
ing those times many fine
burgundy makers sent wines
to the U.S. which should not
have been. They are still try-
ing to rebound from those
instances.
The major problem may
have been how to eliminate
the micro-organisms still in
the wines. There are basical-
ly three ways to accomplish
the task: add sulfites, utilize
heavy filtration, or employ
pasteurization.
