day. Louis Latour's father was
a personal friend of Louis
Pasteur. Not only has Latour
been using this process, he
admits to do so for 100 years.
Many other producers use
this process but don't tell
anyone. The argument is that
red wine that has been
pasteurized won't age well.
All you need to do is taste a
50-year-old Louis Latour a
Aloxe Corton, and you will be
amazed how well Latour's
wine ages. For the Latour
family, adding chemicals has
always been something to
avoid.
"Now the question arises,
will the American consumer
swing back to burgundies?
1988 will be an impressive
year for Red burgundies as
1987 was a year of very good,
reasonable priced, largely
underated and virtually ig-
nored wines. 1986 vintages
are comparable to those of '83
with both displaying ir-
regularities and inconsisten-
cies, so be a little more careful
with these wines. 1985 is the
wine of the decade. Ninety-
eight percent of these burgun-
dies are all super ripe, and
well balanced throughout.
"Only time will tell
whether red burgundies will
make the comeback that they
deserve. In any case, Louis
Latour, Joseph Drouhin,
Louis Jadot, and Bouchard
are all wines that should be
a safe bet, even in an off year?'
