Contest guidelines provide
for one chef from each
restaurant to present an ap-
petizer, which can be
prepared beforehand, and a
main course, wok-cooked
before the audience and
judges . . . Arthur Schwartz,
food critic of the New York
Daily News; Gil Marks, editor
of Kosher Gourmet magazine;
Meryl Ain of the Jewish Week
and Joan Nathan, author of
The Jewish Holiday Kitchen.
The festival will be design-
ed thematically . . . A variety
of "islands" will be created
with similar or related pro-
ducts and services grouped
and exhibited together .. .
For example, the Simcha
Island will feature products
and services related to wed-
dings, bar mitzvahs, bat mitz-
vahs and other celebrations
. . . Other "islands" will in-
clude travel, books, Judaica
giftware, boutique items and
food.
TIME TO consider what
we eat, says Louise Hanlon,
R.D., administrative dietician
at St. Joseph Mercy Hospital
in Pontiac .. .
"Basically, there are two
types of fiber, soluble and in-
soluble. Fruits, vegetables,
oat bran, and legumes —
dried beans and peas — are
good sources of soluble fiber.
Grains, cereals and whole
wheat breads supply insolu-
ble fiber. Each type of fiber
has its own advantages."
According to Louise, soluble
fiber is known to lower
cholesterol in the blood
stream. One theory suggsts
that it actually absorbs
cholesterol and allows the
body to pass it out, instead of
retaining it.
Insoluble fiber is a natural
laxative and helps pass food
through the digestive system
faster. Since food remains in
the body for a shorter period
of time, it has less chance of
building up in the colon. This
reduces the chance of colon
cancer.
"The recommended intake
of fiber is 25-40 grams per
day," says Louise. "This would
be considered a high-fiber
diet." In order to reach and
maintain a high fiber diet,
she suggests these tips .. .
Eat at least four servings of
fruits and vegetables per day.
(Fruit juice contains some
fiber, but not nearly enough.)
. . . Look for whole wheat
breads. (Some breads and
flours may simply say
"wheat" and be only white
