The following recipe is
adapted from Nikki
Goldbeck's Cooking What
Comes Naturally, Ceres Press,
1981. Add a simple green
salad instead of bread or rolls.
COUNTRY POTATO PIE
3 medium potatoes,
peeled
1 /2 teaspoon salt
1 cup (1/4 pound)
shredded Swiss
cheese
1 /2 cup chopped onion
2 eggs
1 cup milk
1 tablespoon dijon-style
mustard
1 /4 cup chopped fresh
parsley
1 /2 teaspoon paprika
Preheat oven to 375F. Spray
a 9-inch pie plate with non-
stick cooking spray. Shred
potatoes on coarse side of
grater or processor and drain
well. Sprinkle with salt. Press
over bottom and sides of pie
plate to form crust. Place in
preheated oven for 10
minutes. Remove from oven
and sprinkle cheese and
onion over. Beat eggs with
milk, mustard, parsley and
paprika. Pour over cheese and
onion and return to oven.
Lower temperature to 350F.
Bake for 40 to 45 minutes un-
til edge of pie is golden and
knife inserted in center comes
out clean. Let stand 10 before
serving. Serves 4.

12 outer leaves from
Boston or romaine
lettuce
3 slices whole wheat
bread, made into
coarse crumbs
1 pound ground beef or
turkey
2 eggs
1 /2 teaspoon salt
1 /4 teaspoon pepper
matzo meal for coating
oil for shallow frying
11/4 cups chicken broth
juice of one lemon
3 large tomatoes, cut in
chunks
1 /2 teaspoon dried basil
SPLIT PEA SOUP
WITH BEEF SAUSAGE
1 cup dried green split
peas
5 cups cold water
1 large onion, peeled and
chopped
1 large carrot, scraped
and chopped
2 ribs celery with leafy
tops, chopped
