Low-Fat, Low Cholesterol
Honey Cake
2 tbsp. oil
1 cup honey
2 egg whites, slightly
beaten
2 cups flour
2 tsp. baking powder;
pinch of salt
1 cup bran
1 cup pineapple juice
1/2 cup chopped pecans
In a large mixing bowl,
blend together oil, honey and
egg whites. In a separate
bowl, stir flour, baking
powder, salt and bran
together. Add flour mixture
and pineapple juice all at
once to honey mixture. Stir
until dry ingredients are just
moistened. Fold in the nuts.
Spoon batter into a lightly
oiled 9x5x3-inch loaf pan.
Bake in a preheated
350-degree oven for 50-60
minutes or until cake pulls
away from sides of pan.
