Some Honey Recipes
For Sweet New Year

"L'Shana Tovah" (May you
be inscribed for a good New
Year) will be heard
throughout synagogues and
homes as Jewish people
celebrate Rosh Hashanah
starting sundown on Sept. 23.
The hope for a sweet year is
a theme of the holiday. Honey
symbolizes the universal wish
that life will be sweeter. The
holiday dinner starts and
ends with sweet dishes. The
traditional Sabbath bread,
challah, is baked in a round
shape, sliced at the beginning
of the meal and served with
slices of apple. Both are dip-
ped in honey and then eaten.
The vegetables and salad
dressings may be prepared
with honey, as well as the
traditional dessert of honey
cake or honey lekach.

Pound chicken pieces to
about 1/4-inch

Honeyed Carrots
3 tbsp. vegetable oil
6 cups sliced carrots
3 tbsp. orange juice
1 /2 tsp. salt
1 /4 tsp. dry ginger
1 /4 cup honey
Combine all ingredients in
a saucepan; cover and cook
over low heat for 25 minutes,
stirring occasionally.
Honey French Dressing
3 /4 cup vegetable oil
V4 cup lemon juice
% cup honey
1 /2 tsp. Worcestershire
sauce
1 /4 tsp. pepper; salt to taste
1 /4 tsp. paprika
v4 tsp. dry mustard
1 /2 tsp. celery seeds
strip of lemon rind, zest
only
Place all ingredients in a
blender or food processor.
Cover and blend at high speed
until smooth.

Honey Cake
1 tsp. instant coffee crystals
1 cup boiling water
3 /4 cup vegetable oil
% cup sugar

1/2 cup honey
3 eggs
1 tsp. vanilla
2 cups flour
1 tbsp. baking powder
1 /2 tsp. baking soda
1 tsp. cinnamon
1 /4 tsp. ground cloves
pinch of salt
% cup chopped pecans
optional: 1/2 cup white
raisins
Combine coffee crystals and
water; stir until dissolved.
Combine oil, sugar, honey,
eggs and vanilla, and beat
with an electric mixer on low
speed until well mixed. Com-
bine dry ingredients and add
alternately with the coffee to
the egg mixture. Beat two
minutes. Stir in pecans and
raisins if desired. Spoon into
a lightly greased and floured
10-inch tube pan. Bake in a
350-degree oven 40-45
minutes. Cool in pan on wire
rack 10 minutes. Remove
from pan and cool. Sprinkle
with powdered sugar.

Honey LeKach
3% cups flour
11/2 tsp. baking powder;
pinch of salt
1 tsp. baking soda
1 /2 tsp. cinnamon
1 /2 tsp. nutmeg
1/8 tsp. cloves
1 /4 tsp. ginger
4 eggs
3 /4 cup sugar
V4 cup vegetable oil
1% cups honey
% cup strong coffee
11/2 cups chopped nuts
Combine all dry ingredients
and set aside. In another
bowl, beat the eggs until
foamy with an electric mixer;
add sugar gradually and beat
until thick and light in color.
Beat in oil, honey and coffee.
Stir in the flour mixture and
nuts. Oil and line with foil
two 9x5x3-inch loaf pans.
Spoon batter into pans and
bake in a 325-degree oven for
50 minutes or until a
toothpick inserted in the
center comes out clean. Cool
on rack before removing from
pans.
