Bake in a preheated 350-
degree oven for 40 to 45 min-
utes or until the mini- .
meatloaves are browned on top
and cooked through. Remove
them immediately to a serving
dish. Makes about 4 servings.

In a medium-sized mixing
bowl (or in a large food proc-
essor), cream the butter (or
margarine) with the sugars.
Beat (or process) in the egg and
vanilla. Mix (or pulse-process)
in the flour and baking soda.
Add the oats and coconut, and
mix (or process) until com-
bined.
With floured hands (or a #40
ice cream scoop) form the
dough into 1 1/2 inch balls, and
arrange them about 3 inches
apart (they spread considera-
bly) on lightly greased and
floured or nonstick spray-
coated baking sheets. Dip the
bottom of a glass in flour and
use it to slightly flatten the
balls.
Bake in a preheated 350-
degree oven for about 12 to 14
minutes or until, the edges of
the cookies are lightly
browned. Cool on wire racks.
Makes about 20 large (approx-
imately 3-inch diameter)
cookies. (For smaller cookies,
make 1-inch balls and bake
about 8 to 10 minutes.)
*(To make quick oats from
old-fashioned ones, simply
//process them slightly in a food
processor.)
