3 cups water
2 cups old-fashioned rolled
oats
1 /2 tsp. salt (or to taste)
In a medium-sized saucepan,
bring the water to a boil.
Slowly stir in the oats and salt.
, When the oats are completely
moistened, cover the saucepan
tightly and remove it from the
heat. Let it rest 8 to 10 min-
utes. Stir briefly. Serve im-
mediately with milk, butter,
brown sugar, honey and/or
raisins to taste. Makes about 4
servings.

1 teaspoon vanilla extract
Sweet Unsalted Margarine 1 cup fresh or frozen
blueberries
In bowl, combine flour, sugar and baking powder; cut in mar-
garine until mixture resembles coarse crumbs. Combine
EGG BEATERS, milk and vanilla. Stir into flour mixture just
until moistened. Stir in blueberries. Spoon into 12 greased
2 1/2-inch muffin-pan cups.
Bake at 400° for 25 minutes or until done. Let cool in pan 5
minutes. Remove and serve warm.

2 tbsps. vegetable oil
2 tsps. salt
1/2 cup rolled oats
1/2 cup wheat germ (or more
rolled oats)
1 /2 cup wheat or oat bran
3 cups whole wheat bread
flour or 'all-purpose
whole wheat flour
21/2 to 31/2 cups white bread
flour
In a large bowl, thoroughly
combine the yeast, honey,
molasses and warm water. Set/
aside until foamy, about
minutes. Stir in the milk pow-
der, eggs, oil and salt. Then add
the oats, wheat germ and
bran.With an electric mixer
beat in 1 1/2 cups each of the
whole wheat and white flours.
Beat for 2 to 3 minutes to help
develop the gluten. Then, by
hand (or with a heavy duty
mixer), mix in the remaining
whole wheat flour and enough
of the white flour to make a
soft, sticky dough.
Cover the bowl loosely with
plastic wrap, and let the dough
rest about 15 minutes so it can
absorb some of the moisture
and be less sticky for kneading.
Turn the dough out onto a
lightly floured surface, and
knead, adding white flour as
needed, for about 10 minutes.
Place the dough in an oiled
bowl, and turn it so all sides are
greased. Cover the bowl loosely
with plastic wrap and a dish
towel, and let the dough rise in
a warm place (such as a
turned-off oven) until doubled
in bulk.
Punch down the dough,
knead it lightly to remove air
bubbles, then divide it in half.
Form each half into a slightly
flattened ball and place it on a
cornmeal-sprinkled (or flour-
sprinkled) baking sheet.
Let the loaves rise, covered
as above, until doubled in bulk.
Before baking the loaves,
lightly sprinkle the tops with
cornmeal (or flour), and use a
sharp razor blade to make cros-
shatching — four cuts across
(about 1/4-inch deep and 1 inch
apart from each other) and four
cuts perpendicular to those.
Bake the loaves in a pre-
heated 350-degree oven for
about 35 minutes or until the
bottoms sound hollow when
tapped. Cool the loaves on wire
racks, and store them at room
temperature. (Or freeze them
for longer storage.)
MEATLOAF "MUFFINS"

beef

1 /4 cup rolled oats
2 slices whole wheat bread,
made into crumbs in a
blender or food proc-
essor
1 16-oz. can tomatoes,
drained and chopped
1 10-oz. package frozen
chopped spinach,
thawed and squeezed to
remove excess liquid.
2 medium-sized carrots,
grated
1 large egg
1 tbsp. dried instane minced
onion (or 1/4 cup grated
fresh onion)
1 tsp. dried oregano leaves
1/2 tsp. dried marjoram leaves
1 /2 tsp. salt
V4 tsp. ground black pepper
In a medium-sized bowl,
combine all the ingredients
and mix very well with your
hands or a fork. Coat 12
standard-sized muffin cups
with non-stick cooking spray
or oil; then pack the meat mix-
ture into the cups, heaping it
slightly if necessary. Place the
muffin cups on a baking sheet
to catch drippings.
