"Nearly six out of ten con-
sumers (59 percent) told
pollsters they would like a
wide variety of selections on
menus. In 1975 only 45 per-
cent of those polled by Gallup
said they wanted a wide
variety of menu selections.
"Self-service salad bars are
also very popular, with 58
percent of those polled saying
that salad bars are a feature
they prefer. That's a jump of
12 percentage points since
1975.
"Noting the big jump of 14
percentage points for greater
menu variety, The Gallup
Report on Eating Out stated
that this year's results may
well reflect the myriad of
different types of restaurants
that have opened in recent
years and the fact that diners
now have more choice when
it comes to the particular
food they wish to eat.'
"Poll results suggest that
restaurants that change their
menus on a regular basis or
those that have daily specials
may keep their customers'
interest for a longer period of
time.
"For this year's 'Peoples'
Choice' poll, Gallup asked
this question of a nationally
representative sample of
adults: 'When you go to a res-
taurant, which of the follow-
ing listed here would you like
to have offered? You may
choose as many or as few as
you like.'
"Other results:
"More than half of those
polled (53 percent) said they
wanted a choice of portion
sizes.
"Substantial numbers of
consumers said they wanted
coffee pots on their tables (42
percent); all-you-can-at spe-
cials (38 percent); complimen-
tary extras, such as relish
tray, an after-dinner drink or
a glass of wine (37 percent);
and self-service soup bars (25
percent).
"About one in five custom-
ers said they wanted dieters'
specials (20 percent) anc: food
items on display before order-
ing (16 percent).
"Only ten percent_ of those
polled said they wanted a
wide wine selection, down
four percentage points from
the finding of a similar Gal-
lup survey in 1985 and down
two percentage points from
results of similar surveys
conducted in 1982 and 1975.
"Gallup also reported that
in 1986 the largest proportion
of men would like a wide
variety of selections on the
menu and the largest propor-
tion of women wanted a self-
service salad bar. More
women (58 percent) than men
(48 percent) prefer a choice of
portion size, but men cited
all-you-can-eat specials more
than women by a 41 percent
to 34 percent margin.
"Women are twice as likely
as men to want dieters' spe-
cials, Gallup reported.
