above makes a great topping
for pancakes (or French toast)
( or a filling for crepes. If
desired, 1/4 cup raisins may be
added to the apples while

taste. Serve the apple topping
warm, as soon it is done
cooking.

and simmer the apples about
6 to 8 minutes or just until
they are tender but not at all
mushy. Combine the corn-
starch and 2 tablespoons
water, and stir into the apple
mixture. Cook, stirring, about
1 minute longer, or just until
the sauce thickens and boils.
Remove the apple mixture
;Tom the heat, and set it
aside.
/ For the gingerbread batter,
put the egg, molasses, sugar
and oil into a medium-sized
bowl, and beat with a fork un-
til well mixed. Add the but-
; tenni& or yogurt, and beat
until combined. Add the flour,
baking powder and soda, and
all the spices, and mix with
/ the fork just until complete-
ly combined.
In a greased (or nonstick
,/
', spray-coated) 8-inch square
/- baking dish, spread all the ap-
ple mixture. Pour the batter
on top, using a spatula to
\ spread it evenly. Bake in a
preheated 350-degree oven for
; 25 to 30 minutes or until a
toothpick inserted into the
\,= gingerbread comes out clean.
For best flavor, serve warm.
Makes about 8 servings.
