I've seen similar versions of
this cake called by all sorts of
names such as Huguenot
Torte, Ozark Pudding, Fin-
nish Apple Thrte, and Am-
sterdam Apple Tart, which
seems to imply that this type
of shortening-free cake is
popular everywhere. It's
delicious plain, especially
when served hot out of the
oven. Or you can "garnish the
lily" by topping the cake with
ice cream or whipped cream.

• 2 large or extra-large eggs
• 2/3 cup packed light or dark
brown sugar
• 2 teaspoons vanilla extract
• 1 /2 cup all-purpose flour
• 2 teaspoons baking powder
• 2 medium-sized apples, cored,
(peeled, if desired) and finely
chopped (about 2 cups)
cup coarsely chopped walnuts

(or pecans)

In a medium-sized bowl,
beat the eggs with a fork un-
til light; then mix in the
brown sugar and vanilla until
compltely combined and no
lumps of sugar remain. Add
the flour and baking powder;
then gently mix with the fork
just until combined. Stir in
the apples and nuts. Turn out
the mixture into a greased (or
nonstick spray-coated) 8-inch
square baking pan. Bake in a
preheated 350-degree oven for
about 35 minutes or until a
toothpick inserted in the
center comes out clean. Serve
warm or at room temperature.
Freezes well. Makes about 6
servings.

"Upside-Down"
Gingerbread with Apples

In this recipe, a cooked ap-
ple mixture is spread in the
bottom of a baking dish and
topped with gingerbread bat-
ter. The baked dessert can be
served as is, or each piece can
be turned over so the apples
are on top. As with the
previous dessert, each piece
can be topped with ice cream
or whipped cream, if desired.

Cooked Apple Mixture:
• 4 medium-sized to large apples,
cored (peeled, if desired) and
thinly sliced
• 1 /2 cup water
• 1 /3 cup packed light or dark
brown sugar
• 1 tablespoon lemon juice
• 1/4 teaspoon ground cinnamon
