new chef ... and new owners
... All heralded opening of
former Archibald's ... now
called Panache ... on Woodward
in Birmingham.
Carol Ferrell, who has Carol
Interios (E.G. Nicks, Aristocrat,
The Place, etc.) is responsible
for the pleasant change away
from its previous old-fashioned
look ... The lounge dancefloor
is larger and there's much more
intimacy than before ... plus a
lot of new imagination.
John Evans, its executive
chef, is probably one of the
finest ones around ... and he is
capably assisted by Clark De-
fett, sous chef.
John Emous, formerly at
Hotel St. Regis, is corporate
executive chef, and one of the
owners ... with Ken Walters,
Richard Sikorski and David
Tims.
Prices are much lower than
before ... and Panache is now
most conducive to informal din-
ing with a formal atmosphere.
While I was there, the coffee
was served along with a tray
consisting of chipped chocolate,
chipped orange rind, whipped
cream, sugar, sugar substitute
and regular cream in a pitcher.
Samplings of the foods now on
Panache's menus were con-
sumed with high approval by
the over 500 persons who
attended.
Something different ... and
probably very well appreciated,
what with the parking situation
in Birmingham ... is the new
policy adopted at Panache ... It
will send own transportation to
pick up and take back one or
more customers in the area for
lunch.
Clever idea also in men's
room is lunch and dinner menus
tacked on a wall.
If the waitpersons are any-
thing like the waitress we had
at the pre-opening ... Karen
Dargis ... customers are in for
a treat ... She is so pleasant
and efficient ... not to mention
a great smile.
John Katalenic's five-piece
Mirage band furnished music for
the evening ... John himself
only will be at the piano Tues-
day, Wednesday and Thursday,
6 p.m. to 9:30 p.m. ... Alexan-
der Zonjic will be there on Mon-
day nights.
The same gents who are bos-
sing Panache ... will have an-
other grand opening this Sep-
tember ... Rikki's American
Grille in American Motors Bldg.
on Franklin Rd.
The former Archibald's needed
a change ... and it finally came
to pass ... with most pleasant
results.
THE TRIO who made Car-
negie Deli a favorite among
New York's theater crowd and
then expanded to Atlantic City
and Ft. Lauderdale, have opened
a fourth deli in Secaucus, N.J.
... Three more are planned for
next year in Los Angeles,
Philadelphia and San Franciso
... Other locations also include
Washington and possibly
Chicago and Cleveland ... as
well as Seoul, Korea in 1988.
Freddie Klein, Leo Steiner

and Milton Parker ... business,
food and financial brains respec-
tively of Carnegie Deli, have
garnered a reputation as one of
New York's better Jewish delis
... Steiner is the visible partner
... Together with Leon
Sverdlen, a fourth partner and
general building and design con-
tractor, the three are looking
still further ahead to Phoenix,
Denver and Cleveland.
PET BEEFS . . . Everything
brought on one plate ... break-
fast especially ... with toast,
side of margarine sopping in the
scrambled eggs ordered.
KITCHEN HINTS . . . Make
your hamburgers beautiful and
tasty ... If your family is tired
of the same old burgers, try this
... Saute onions and sliced
mushrooms (just a handful) and
then mix them into the un-
cooked hamburger ... To make
them neat and equal, use an ice
cream scoop for measuring out
each patty ... Flatten and try
these treats for your •family
For a quick way to thaw chic-
ken, run cold water over frozen
chicks ... but be careful to
make sure the poultry is not
allowed to stand in water be-
cause it will soak out the flavors
. If your chicken dries out
when • you roast it, just place an
apple, whole, inside ... The
apple will keep the chicken
moist and tender ... Throw the
apple away when the chicken is
finished roasting.
Different vegetables are best
stored different ways ... Al-
though it's best to eat fresh corn
on the cob the day you buy it,
it's not always practical If
you must store it longer, be sure
to leave all the outside leaves on
... Wrap the ears in damp cot-
ton kitchen towels and refriger-
ate ... Always clip the "tops" of
vegetables like parsnips, carrots,
beets and turnips ... The leafy
tops will use the moisture of the
edible part of the vegetable and
dry them out ... Peas and be-
ans, squash and cucumbers, and
even tomatoes store best in the
refrigerator just as they are.

Summer Fun Day

Swimming at Michigan's first
wave-action pool and riding a
water slide are part of Summer
Family Fun Day sponsored by
the Oakland Parks Foundation
at Waterford Oaks County Park
on June 14.
Activities take place from 11
a.m. to 5 p.m., regardless of
weather, and include games, a
moon walk, roller skating
