NEVER SEEMED ABLE
TO GET off the ground ... and
so Country Market Grille,
former Maple House, Southfield
and Ten Mile Rd., has shut of
the lights and closed its doors.
THE NEW NOVI HILTON
at 1-275 and Eight Mile Rd. is
an imposing sight ... very
impressive-looking . This is
the same with its interior,
where ambience is so airy and
inviting ... 240 beautiful rooms
and suites, 100-seat amphi-
theater, 9,000 sq. ft. Grand Bal-
lroom for upwards of 800 people,
indoor pool terrace, whirlpool,
sauna, exercise room, sundeck,
etc.
Gary Seibert, general man-
ager of Novi Hilton ... and a
very good one ... is well-known
to folks around these. parts ...
His 11 years with the Hilton
Corporation includes stints at
Northfield Hilton in Troy, Foun-
tainbleau Hilton in Miami, At-
lanta Hilton and Towers, Dallas
Hilton and Hilton of Philadel-
phia on Campus at University of
Pennsylvania.
He is a native of West Ger-
many and became a U.S. citizen
in 1972 ... From 1969 to 1972,
Gary was in the U.S. Army, in-
cluding a year with helicopter
unit in Vietnam.
Gary's executive chef at Novi
Hilton, Shaiq Husain, had
priorly been executive sous chef
at Capitol Hilton in Washing-
ton, D.C. ... In 1976 he worked
at the Washington Hilton and
was encouraged by Chef Barry
Thompson top pursue his inter-
ests in cooking ... After three
year of extensive training, Shaiq
received his associates degree in
hotel and restaurant manage-
ment ... and continued to work
for the Hilton in various culi-
nary capacities for four more
years ... In 1981, he had the
opportunity to work with world
renowned French chef Yannick
Cam at his restaurant, Le Pavil-
lon, in Washington, D.C. ...
When the very fine dining spot
closed for relocation, Shaiq
joined the Capitol Hilton . . .
mastering his international
cuisine skills over the three
years he spent there ... He is a
native of India.
We were recently at Novi Hil-
ton for an introduction after
opening of its fine Crystal Swan
restaurant ... and tasted the
elegant hors d' oeuvres prepared
by Shaiq and his proficient staff
.. blinis with Beluga caviar
(made with pancake flour),
pheasant mousse, salmon sushi,
shrimp sushi, chicken Nora
(smoked salmon mousse and
chicken mousse with spinach),
hot duck foigras with chicken
mousse, roast lamb chops with
sesame seed Rosemary crust ...

and a most unusual Shaiq origi-
nal presentaion of brandade egg,
and old French dish ... His
empty, full egg shell with top
cut off and cleverly places as an
opened lid, is a very highly im-
pressionable hors d'oeuvre ...
but even more delicious filled
with lemon sole, lobster and
American caviar.
To go with the hors d'oeuvres
very graciously served by
white-gloved waitpersons, was
Domain Chandon Blanc De
Noirs and Brut champagnes ...
plus three different flavored
vodkas.
Crystal Swan seats 98 ... in
its elegant decor of peach,
browns andsoft gray-blue tones,
indirect lighting, tall mirrors
and light oak.
Highly knowledgeable Man-
ager Kass Allie wheels a cart of
various after-dinner brandies
and cognac ... explaining each
one ... Food and Beverage Di-
rector Mark Pederson couldn't
be more proud than he is of the
new Novi Hilton.
Debbie Marshall, idrector of
sales, began her career in 1976
at the Northfield Hilton ... as
an executive secretary ... After
attending Hilton Development
Program a year later, she spent
next three years working way
up in sales department to direc-
tor of sales ... Debbie was so
good she was moved to Hilton's
national sales office until Novi
Hilton position became available
... Her entire 30 years has been
spent in the Detroit area.
Where did name Crystal Swan
come from? ... Just picked out
of the air, so to speak ... And
also by accident are those crys-
tal swan relish dishes on each
table ... After it was named
Crystal Swan, Gary saw the
lead glass dishes in a trade
journal ... and they have be-
come a trademark of this most
delightful room.
FELLOW ALWAYS came to
the same lunch counter and an-
noyed the same waitress, Who
was beginning to lose her
temper ... Next time he came
in, the gent roared, "Make it
snappy — I want a grilled
cheese sandwich." ... "Do you
want in on rye or in a trap, wise
guy?"
THE OWNER OF a bar was
awakened at 4 a.m. in his home
by a phone call, the voice cry-
ing, "When does your saloon
open? ... "Sorry, you can't get
in til noon." ... "I don't want to
get in — I want to get out,"
came the deeper cry ... (re-
miniscent of Max Rubin being
locked in at Jakks Lounge when
place closed while he was in
men's room.)
Panhandler approached a kind
old lady and pleaded, "Madam, I
haven't eaten anything in a
week!" ... "Then you should
force yourself," came the helping
advice.
SAME PANHANDLER
came around to the kitchen door
of a restaurant and asked for a
bite ... The cook asked him,
"Do you like cold noodle soup?"
... "Yes, lady" ... "Then come
around tomorrow — it's still hot
now."
