Icing for Drizzling:
1 tbsp. butter or margarine,
melted
11/4 cups confectioner's sugar
Si to 1 tsp. almond extract (or to
taste)
3 tbsps. milk or water
2 to 3 tbsps. sliced almonds

For the bottom, layer, cut the
butter into the flour until parti-
cles are fine. Sprinkle with just
enough water to moisten, and
toss with a fork to mix; then
gather into a ball. (To use a food
processor, put the butter and
flour into the bowl, and pulse-
process until fine. With the
machine running, add water
through the chute, and process
just a few seconds longer until
combined but not until a ball
forms. Gather into a ball.)
Divide the dough in half.
With lightly floured fingers, on
an ungreased baking sheet,
press each piece of dough into a
10 by 4-inch rectangle, keeping
the rectangles at least 2 inches
apart.
For the top layer, put the but-
ter and water into a medium-
sized saucepan, and bring to a
boil over medium-high heat. Re-
duce the heat to low, and add all
the flour at once; then beat the
mixture with a wooden spoon
until it leaves the sides of the
pan. Remove from the heat, and
add the eggs one by one, beating
until each is completely incorpo-
rated. The mixture will have a
satiny sheen.
(The hot mixture may be
transferred to a food processor
bowl for the last step. Add eggs,
one by one, and process only a
few seconds for each.) Beat in
the almond extract. Then evenly
spread half of the mixture over
each dough rectangle:
Bake in a preheated 350-
egree oven for one hour. Re-
ove from the oven, and allow
o cool on the baking sheet. (The
op of each pastry will puff up
uring the baking, and then col-
apse as it cools.) Use a large
etal spatula or pancake turner
o loosen the pastries from the
heet.
For the icing, mix together
he butter, confectioner's sugar,'
lmond extract and enough liq-
id for a drizzling consistency.
rizzle the icing over, the pas-
ries in a random pattern, and
prinkle with almonds.
To serve, cut crosswise into
lices.
Makes two rectangular pas-
ries; about eight servings.
