In a large mixing bowl, cream
the butter (or margarine) until
smooth; then add 1/3 cup of the
sugar and mix until fluffy. Beat
in the egg yolks, one by.
Stir in the reserved flour mix-
ture alternately with the cider,
and mix until well combined.
In a clean bowl with clean
beaters, beat the egg whites
with the cream of tartar until
frothy; then gradually add the
remaining sugar while confirm.

minutes; then run a knife
around the edge of the pan, and
remove 'the sides. Leaving the.
cake on the tube base, cool it
completely on a wire rack. Use a
spatula to assist in carefully
removing the cake from the
base.
