The Best of Everything

IF YOU COULDN'T use
chop sticks, chances are you
went away hungry from the
recent Chinese wedding
feast given at Rikshaw Inn
by the Conferie de la Chaine
des Rotisseurs Chapitre du
Michigan gourmet society.
That is, unless you hap-
pened to fill up before hand
on the hors d' oeuvres and
wine.
Also, don't even think of
dining unless you abided by
the society's rules . . . No
smoking (it hampers the
taste buds,) no salt or pep-
per shakers, no water (wine
takes its place) and no flow-
ers (scent may interfere
with aroma of the wines.)
A good suggestion by
this gourmet society, not
a rule, is to eat your food
as soon as served . . .
since it is best when eaten
hot.
The waitresses and a wai-
ter all wore black tie . . .
and the wedding feast was
an anniversary dinner, too
. . . with Joe Cohen, Rik-
shaw owner with David
Lum, and wife Barbara
celebrating their first mari-
tal year.
The 11 courses were
selected by the society . . .
and prepared by David,
Chef Hans Lum and sous
chef Chuen Auyoung . . .
Rikshaw manager Kathy
Heath served as maitre d'
hotel.
There was always wine on
the table . . . Wan Fu
Chinese wine made in
France, Foster Bischofgar-
ten Riesling from Ger-
many and Chandon Blanc
de nous French wine . . .
Also Tsingtao beer.
Very little sauce was
used . . . In fact only a
few of the dishes had any
. . . The ones we like best
were Mongol Ngau
(Mongolian Beef) and Ya
Jup Gai (Coconut Chic-
ken) . . . The nine other
dishes were: Shood Yee
Gai See Tong (white
ocean fungus soup with
chicken), Bud New Gai
Towl (squab), Gum Gai
(bar-b-q chicken), Sai
iWoo Opp (duck), Jow Har
;Yen (shrimp balls),
Young Dong Goo (stuffed
Chinese mushrooms),
Kwongtung Young (Can-
tonese lamb) and Shu Gee
(cold meat.)
These were followed by
Chinese tea and wedding
pastry . . . delicious and
most unusual.
We remember enjoying
dinner for the same group at
Rikshaw in 1977 with Len
Barnes of Motor News and
the late George Pierrot . . .
It was a year later that the
Rikshaw was nominated
and accepted as a member of
this honored gourmet
society.
About those wedding pas-
tries . . . if you couldn't use
chop sticks too well and
were still hungry, they
served a major purpose . . .
You picked up all you
wanted with fingers and ate
to your stomach's content.
Never realized so many
people couldn't use chop
sticks . . . Idea for the

Chaine des Rotisseurs . .
teach your members the
correct way to use chop
sticks so they can enjoy
their meal when dining
Oriental . . . or have an-
other rule . . . Since this is
America, eat the American
way . . . with forks if so de-
sired.

THE WEIGH IN,

portion-controlled diet and
caloric-controlled restau-
rant will open Dec. 1 at
Tally Hall, 14 Mile and Or-
chard Lake Rd. . . . It'll
seat 40 and serve gourmet
specialty seafoods, poultry
and beef.
RON CODEN is now at
Vargo's, Six Mile, west of
Middlebelt, for the next
three Monday nights.
Also there for just a short
engagement (one more
week) Tuesday through
Saturday, is a group you
won't want to miss . . . it's
going places . . . They call
themselves Rumples-
tiltskin . . . four guys and
three gals . . . who got to-
gether almost three years
ago . . . and are being dis-
covered as one of the best
aggregations around.
All seven sing . . . with
the lassies up front and the
guys playing lead guitar,
bass guitar, electric piano
and drums . . . It's a class
act, singing songs from "In
The Mood" to top 40s and
Motown biggies . . .
The girls have a tremen-
