JERUSALEM (JTA) —
Israel's national debt in-
creases by one dollar a day
per person says State Com-
ptroller Ernest Nebenzahl.
Speaking on the occasion
of the publication of his an-
nual report, Nebenzahl said
that an average Israeli fam-
ily was spending more than
4,000 Pounds a month to
cover Israel's overseas
debts.

Grossinger's, the famous
resort in the Catskill Moun-
tains in New York, has
made available to its guests
a guide on kashrut called,
"What Is Kosher?"
The eight-page paper-
backed guide explains for
the non-Jewish guest what
being kosher is all about
and for Jewish guests offers
recipes and speaks of the
origins of kashrut.

for Guests on What Is Kosher
3 pounds fish
(whitefish, carp, pike)
2 onions
2 celery ribs, chopped
1 carrot, chopped
2 eggs
salt
pepper
water
Skin and bone enough fish
to have 3 pounds fillets. Put
heads, bones and skins in a
large pot along with 1 onion, 2
celery ribs and 1 carrot, all sli-
vered or chopped. Add water
to cover and simmer to make a
stock. Meanwhile chop the fil-
lets; add 1 large onion, grated,
2 eggs, and salt and pepper to
taste. Mix well together, using
the chopper so that the texture
will be right.
Shape the mixture into balls,
using about 1/3 cup for each
dumpling. Place the dumpl-
ings into the pot of stock, let-
ting them rest on the vegeta-
bles and bones. Add more
water to cover if necessary.
Bring to a boil, then reduce
heat and simmer for 11/2 to 2
hours. Liquid should be re-
duced by half. Chill the dumpl-
ings before serving. Garnish
with carrots and with the
strained stock, jellied and
chopped, if you like. Makes 4
to 6 servings.
VARIATIONS:
To stretch the mixture, add 2
slices of white bread, soaked
in water and squeezed.
Add 1 raw carrot, grated, to
the mixture with the grated on-
ion. Add 1 more sliced carrot
to the stock.

Do not add fish skin to the
stockpot. Instead wrap each
fish ball in a piece of skin for
cooking. Remove skin for
serving.
Form 3-inch flattened pat-
ties of the fish mixture. Dip into
fine crumbs and panfry in oil.
Or bake at 375 degrees for 12
to 15 minutes.

Blintzes
BLINTZ BATTER
3 eggs
1 cup milk or water
1 tsp. salt
2 tbsps. salad oil
3 /4 cup sifted flour
Butter or oil for frying
Beat the eggs, milk, salt and
salad oil together. Stir in the
flour. Heat a little butter or oil
in a 6-inch skillet. Pour about 2
tablespoons of the batter into
it, tilting the pan to coat the
bottom.
Use just enough batter to
make a very thin pancake. Let
the bottom brown, then care-
fully turn out onto a napkin,
browned side up. Make the
rest of the pancakes. Spread 1
heaping tablespoon of any of
the fillings along one side of
the pancake. Turn opposite
sides in and roll up like a jelly
roll. You can fry the blintzes in
butter or oil or bake them in a
425 degree oven until
browned. Makes about 18.
Serve dairy blintzes with sour
cream.

FILLINGS FOR BLINTZES
Cheese:
2 cups drained cottage
cheese
1 egg yolk
3 /4 tsp. salt
1 tbsp. melted butter
2 tbsps. sugar (optional)
1 tsp. lemon juice (optional)
Beat the cheese, egg yolk,
salt and butter together. Add
the sugar or lemon juice if you
like — some people like them
sweet, some don't.
Blueberry:
11/2 cups blueberries
3 tbsp. sugar
1 tbsp cornstarch
1 /8 tsp. nutmeg
Toss all the ingredients to-.
gether.
Potato Latkes
2 eggs
3 cups grated, drained
potatoes
4 tbsps. grated onion
1 tsp. salt
1/4 tsp. pepper
2 tbsps. cracker or matzo meal
meal
1/2 cup oil or butter
Beat the eggs and add the
potatoes, onion, salt, pepper
and meal. Heat half the oil or
butter in a frying pan and drop
the potato mixture into it by the
tablespoon. Fry until browned
on both sides. Remove and
drain off excess fat. Keep pan-
cakes hot until all are fried and
add more fat or butter as re-
quired. Serves 8.
Pessimistic View
TEL AVIV (ZINS) — Is-
rael's ambassador to the
U.S., Ephraim Evron, is de-
scribed by many as an in-
corrigible optimist. But he
has told at least one Cabinet
member that the U.S. posi-
tion on Israel is "very bad."
The statement was made
before the U.S. Security
Council vote in March
which condemned Israel's
administration of the West
Bank.
